Moroko sushi (cooked river fish sushi)

This food used to be cooked as a hospitality dish at festivals or religious rituals in the Seino region where a food culture around river fish had been nurtured. Vinegared rice is laid in a special sushi box, on which sweetened boiled "moroko (a kind of carp)" is arranged and pressed from the top to make oshizushi (pressed sushi). Its finely bitter taste is unforgettable to those who experience it.

Our Moroko zushi is made from "nimoroko" or fresh river fish boiled in soy sauce and sugar only which are arranged on top of vinegared rice grown in Gifu Prefecture. One cut piece has 3 fish each. We produce and offer this item as it is cooked less and less in general households.

Moroko sushi recipe
Ingredients :

(serves 4)
・4 cups polished rice
・2 tablespoon sake
・10cm kelp used for stock
・【A】80ml vinegar
・【A】5 tablespoon sugar
・【A】1/2 teaspoon salt
・200g minnows boiled down in soy sauce
・8-12 aspidistra elatior leaves

Method

①Wash the rice and cook it with water (not included in quantity), sake, and kelp.
Add the seasonings of【A】to the boiled rice to make vinegared rice, and let it cool.

②Wet the sushi box, spread the Aspidistra elatior leaf along with the bottom plate, put the vinegared rice of ①, flatten it, and lay minnows on top of it. Cover it with another leaf and a lid, place a weight on the lid, and let it sit for two to three hours.

③Take the sushi out from the box and cut it into 12 to 18 pieces.
