Moroko sushi (cooked river fish sushi)

This food used to be cooked as a hospitality dish at festivals or religious rituals in the Seino region where a food culture around river fish had been nurtured. Vinegared rice is laid in a special sushi box, on which sweetened boiled "moroko (a kind of carp)" is arranged and pressed from the top to make oshizushi (pressed sushi). Its finely bitter taste is unforgettable to those who experience it.

We preserve the traditional food not made often in households today by providing some modern ideas to offer it to our customers and visitors. Our Moroko zushi uses small river fishes, so it is easy to eat it casually, especially on event or festival occasions.

You will quickly finish 6 pieces of our box sushi savouring the fresh, sweet and sour flavor from each bite

Our Moroko zushi is made from "nimoroko" or fresh river fish boiled in soy sauce and sugar only which are arranged on top of vinegared rice grown in Gifu Prefecture. One cut piece has 3 fish each. We produce and offer this item as it is cooked less and less in general households.

＜Messages from the Staff＞ Moroko sushi is limited in supply. Please call us before your visit and we will keep it for you.

We use highly fresh "Moroko" and rice produced in Gifu Prefecture.

Moroko zushi is available at JPY 660 for 6 pieces or JPY 550 for 5 pieces.

We also offer river fish boiled in sweet soy sauce, miso sauce or wrapped with sweetened seaweed.

Visit "Kanezen" for local delicacies of river fish.
