Ajime dojou (local fish) dishes

"Ajime dojou" is a typical Japanese loach which inhabits the middle and upper reaches of rivers and eats mainly algae growing on stones. They are caught using fishing methods which utilize their habits of living in subsoil water and running upstream. Due to their soft bones and favorable taste, their dishes have been enjoyed since very early times. They are usually simmered in soy sauce and sugar or grilled.

This is an original menu startied in 2016 to cater to our regular customers. We use small-size ajime loach to be enjoyed even with the bones. We infuse our expertise and special seasoning into this signature dish of ours.
