Jinenjo (Japanese yam) dishes

Dishes using Japanese yam have long been favoured in mountainous regions as the taste of autumn in soups and deep fried cookings. It is characterized by a distinct flavor and strong stickiness, giving a crispy texture when it is cut or soft fluffiness when it is mashed. "Mukago" a section of it formed over the ground also provides fine states like the underground section, and is enjoyed as a boiled or rice dish.

A special Mugitoro set meal prepared by local female cooks
We offer simple hometown dishes with vegetables grown by local female residents. Japanese yam used for Mugitoro dishes are grown in Yamato Town or Minokamo City, but when their yield is low, they may offer alternative dishes instead. Their uncompromising attitude is demonstrated by the taste of barley rice and home-made soup with special broth.
