Simmered koro imo (small potatoes)

Koro imo means potatoes that are so small that they cannot be offered for sale. This food began with the desire to avoid the waste of such potatoes by preparing a tasty dish using them. Unpeeled potatoes are boiled or fried and then simmered with sugar, soy sauce, etc. for a long time. It provides a simple, nostalgic and home-made taste.

That nostalgic taste of mum's cooking in a meal or with sake
“Simmered koro imo”, called Koro-imo-no-nikkorogashi served at Yoshidaya offers an unchanging taste at all times. The cook carefully adjusts the duration of simmering due to the varying water content of ingredients depending on harvest seasons in order to offer a somewhat nostalgic taste resulting from a long preparation time.
