Due to its crispy texture and relative lack of astringency and bitterness, it has been widely used as an ingredient in simmered or rice dishes.

"Okazuya Yamamoto" offers free selections of rice dishes and side dishes for a lunch meal. They offer tastes which cannot be enjoyed with products from other shops in their cooking of bamboo shoot mix rice, tempura, miso simmered or soy sauce simmered dishes and so on.
