Kokufu Eggplant

It has been cultivated in Kokufu Town, Takayama City for many years, and the seeds have been saved and passed on to this day. It is characterized by its thin skin, light purple color, and soft pulp. It is suitable for grilling, and the traditional cooking method of the Hida region, grilling with soy bean paste, has taken root in the region.
