"Shichihokan" is an inn in Shiozawa Hot Spring located on a road leading to the Nomugitoge Pass, at the elevation of 1,000 m with a fantastic view. In addition to our dinner menu making generous use of Hida beef, wild vegetables, etc., our Japanese breakfast featuring "hohba miso" has been popular since our establishment opened.

Hohba miso recipe
Ingredients
:
(serves 4)
・100g miso
・80g welsh onion
・80g shiitake mushroom
・1 hoba (brown; magnolia leaf)
Method
①Cut the welsh onions diagonally and remove the hard tip of shiitake mushroom stems and cut them into fine strips.
②Put a net and a leaf on shichirin (a small round charcoal stove made of clay or earthenware), put miso, welsh onions, and shiitake mushrooms, and eat them while grilling.
