Hohba miso (miso grilled on a magnolia leaf)

In the Hida region, the fallen leaves of Japanese magnolia were collected in autumn and utilized as a cooking tool. Hohba miso is a simple meal prepared by baking miso paste and chopped leek pieces upon a magnolia leaf. Today Hida beef or mushrooms are added to be baked together, and thus the dish has become an essential hospitality item of the region.

Hohba miso recipe
Ingredients :

(serves 4)
・100g miso
・80g welsh onion
・80g shiitake mushroom
・1 hoba (brown; magnolia leaf)

Method

①Cut the welsh onions diagonally and remove the hard tip of shiitake mushroom stems and cut them into fine strips.

②Put a net and a leaf on shichirin (a small round charcoal stove made of clay or earthenware), put miso, welsh onions, and shiitake mushrooms, and eat them while grilling.
