Nishin Zushi(sushi)

A type of "Narezushi" made by mixing and fermenting ingredients such as herring, Japanese radish, carrot, fermentation starter, cooked rice and salt. It is treasured as a staple food in snowy regions as a supplement for the lack of animal protein during winter. Other fish like salmon and trout may be used instead of herring. It used to be an essential and dainty dish on the table for New Year's Day, and was always prepared before New Year in the old days.

A specialty cuisine of Ochobo-san (the popular name for the Chiyobo Inari Shrine): "grilled catfish". Its light, tender taste is praised as better than eel. The "Namazu Lunch" that allows customers to enjoy this river fish masterpiece is a popular item on the menu. The dish is cooked delicately, with the secret sauce that has been safeguarded since the founding of the restaurant and is served without the original flavor of the river fish being impaired.
