Tochi mochi (horse chestnut rice cake)

It requires a lot of work to prepare the fruits of "tochi" (horse chestnut) to be edible due to their hard skin and strong bitter taste. Long ago, the skin would be softened with hot water, peeled with a tool, and then the fruits would be dipped into running water and lye (ash) for many days to remove the harsh taste. Tochi mochi is made by boiling tochi fruits and sticky rice together to allow the unique flavor of tochi to characterize the dish.

"Tochi mochi" is a must-try food you should enjoy in winter in the Shirakawa-go area. Rich with starch and protein, it used to be an important preserved food item when it was hard to obtain food ingredients. We generously use the fruits of horse chestnuts harvested in Shikawa Village, so its unique, strong flavor will penetrate your palate.
