"Unforgettable taste" created by Gujo pepper and local hard tofu
The trick is to roast the local chili pepper called "Gujo nanban" to give it a flavor and to mince tofu as finely as possible. The soup stock is carefully made from kelp, dried shiitake mushrooms, and dried small sardine to create a "spicy but addictive taste."

A set meal of "sushi and tugi-jiru soup" of unique taste
This meal set has "Tsugi jiru," local specialty soup, to go with other dishes.The first sip gives a sweet taste, which is followed by spiciness. It goes extremely well with sushi as well. Tsugi jiru is served upon reservation as it takes longer to prepare it.

Ingredients
:
(serves 2)
・Soup stock (you can add dried shiitake mushrooms): You can add by pack or grains
・350ml water
・2 taka-no-tsume (gamblea innovans (species of deciduous tree))
・【A】2 tablespoon soy sauce
・【A】2 tablespoon sake
・【A】A pinch sugar
・【A】About 1/4 tofu
・【A】Seaweed : As much as you like
・【A】Fu (Wheat gluten cake) : As much as you like
Method
①Put soup stock to the water in a pot. (Let it sit for a few hours)
②Roast the taka-no-tsume a little bit, break them in half, put them in a tea pack, and put it in ① over a fire to boil. (3-5 minutes)
③Taste it. If it is hot, add【A】and let it boil.
④If the taste isn’t strong enough, add soy sauce (not included in quantity).
