Suttate dishes (bean soup)

"Suttate jiru (soup)" is a traditional food from the Hida region, made from "suttate," boiled beans mashed on a stone mill, to which miso paste or soy sauce is added. In the olden days, the soup would be offered in ceremonies or Hoonko (a memorial service in Shin Buddhism). In the Shirakawa village - famous for its thatched rafter roof houses and registered as a UNESCO World Heritage site - "Suttate nabe (pot)" has developed into a new local food.

Very nutritious! "Suttate Nabe" hot pot with 100% soybeans
"Suttate" is a simple soup prepared by mixing stone-ground soybeans with a miso and soy-sauce-based broth. It is a local specialty dish of Shirakawa Village with 100% soybeans and without straining. It is less common now, but when the villagers get together and dine, this dish was a must, and everyone loved it.

Suttate (soybeans boiled and ground with a stone mill) soup recipe
Ingredients :

(serves 4)
・20g soybeans
・5g light-colored soy sauce
・Water:Suitable amount

Method

①Wash the soybeans and soak them overnight in water.

②Boil the soaked soybeans. Turn off the heat when you think they are slightly hardened.

③Mix them with a blender until they are smooth.

④Put them into a pot, season them with soy sauce, and heat them until just before they boil.
