Kanten (agar) dishes

In Yamaoka-cho of Ena City, agar is actively produced by utilizing its fine weather in winter and large temperature differences between day and night. The name of "kanten" came from "tokoro-ten" or gelidium jelly exposed to cold weather and "kan (cold)" in Japanese. As the name suggests, gelidium jelly is exposed to the cold weather in winter, whereby the water in it is frozen and melted repeatedly to be dried eventually.
