Ajime dojou (local fish) dishes

"Ajime dojou" is a typical Japanese loach which inhabits the middle and upper reaches of rivers and eats mainly algae growing on stones. They are caught using fishing methods which utilize their habits of living in subsoil water and running upstream. Due to their soft bones and favorable taste, their dishes have been enjoyed since very early times. They are usually simmered in soy sauce and sugar or grilled.

This is an original menu that includes pressed sushi made with sweet stewed ajime dojo (local fish) and fried ajime dojo as a set. We use small ajime dojo so that you can eat the whole including bones.
