Ajime koshou (pepper)

This red pepper is a native variety and special produce of the Nakatsugawa City area which has been cultivated from long ago. It is called “Ajime koshou” since it looks like Ajime dojou (or a type of loach) which inhabits the Tsukechi River which flows through the city. Koshou means pepper in Japanese. The fruit is thin and long, with a pleasantly spicy flavor. When harvested young, it can be eaten fresh as the spiciness is much less.
