Bijo mochi (beautiful woman’s rice cake)

Bijo mochi has long been made in the Asahi area of Takayama city from nonglutinous rice. It has a distinct chewy texture and does not easily fall apart when boiled. Legend has it that a woman who taught people how to make rice cake easily was believed to be the incarnated guardian of "Bijogaike" (the pond of beautiful woman), and this rice cake dish was named after that story. The mochi is cut and baked or put into a soup for eating.

Using 100% home-grown rice, offered in a wide variety of ways
The ingredient rice is all home grown. We strictly select local products only such as mugwort and egoma sesame. A variety of products are offered with various ingredients ranging from mugwort to brown rice or in white/red color to be used for commemorative occasions. Made in a special production process, they are soft yet firm, not dissolving even when boiled.

"Zenzai" maximizing the texture of Bijo mochi
"Bijo mochi zenzai" has been offered for about 10 years as a hot dish in cold winter, and now it is available all year around. We prepare the rice cake in optimal thickness, allowing it to become soft easily while keeping its sticky texture. The seasoning is mildly sweet for more people to enjoy it.
