Sawa azami (thistle)

Sawa azami is a type of thistle cultivated in Ibigawa Town. Originally it grew wild in valleys at the foot of Mount Ibuki. It was collected and cultivated around houses or in tea tree fields. Today it is grown even in crop rotation fields. Mid-rib part of leaves is used for food. A favorite of the local people since the olden days, dishes using sawa azami have always been cooked and offered for local festivals.

"Oyaki" using "sawa azami" was created in an effort to preserve the traditional vegetable dishes which are dying out. Using the vegetable in a bun makes it easier to be eaten, and now it is a favorite of all generations from children to the elderly.
