Suttate dishes (bean soup)

"Suttate jiru (soup)" is a traditional food from the Hida region, made from "suttate," boiled beans mashed on a stone mill, to which miso paste or soy sauce is added. In the olden days, the soup would be offered in ceremonies or Hoonko (a memorial service in Shin Buddhism). In the Shirakawa village - famous for its thatched rafter roof houses and registered as a UNESCO World Heritage site - "Suttate nabe (pot)" has developed into a new local food.

Enjoy the gentle taste in the steaming hot pot
We began to serve the dish in 2014 when we became known nationwide after competing in the Japan Hot Pot Grand Prix Competition. We carefully choose broth to boost the taste and add cloud ear mushroom from Shirakawa Village, horse chestnut rice cake, etc. Our customers joyfully comment on its fine taste.

"Hida beef suttate hot pot" awarded No.1 in Japan
We added Hida beef to a soup with grated soy beans only. Our special hot pot team "Shirakawago-Nabekuitai" made efforts to improve how to cut vegetables, season the pot, etc. and then won the Japan Hot Pot Grand Prix Championship in 2014. We were a runner-up in the competition the following year as well.
