Hebo (wasps) dishes

"Hebo" refers to wasps. In mountainous areas far away from the seas, hebo has been consumed as a precious supply of protein by sweetening and boiling it in soy sauce or cooking it with rice. In the Kushihara area of Ena city, locals try to grow wasps' nests bigger in their private properties, and they even hold a competition in November every year over the weight of the nests.

Flavorful "Hebo goheimochi" baked in thick, sweet sauce
We began serving the dish around 1989, a combination of hebo, wasp larvae, and traditional local rice cake, goheimochi. The sauce is made of miso and powdered larvae. Goheimochi which is cooked after receiving an order has gathered popularity due to its rich flavor and deep sweet taste.
