Yamagobou miso zuke (miso-pickled root vegetable)

"Yamagobou" refers to the roots of a thistle family plant, and is also called "kiku (chrysanthemum) gobou" since its cut end resembles a chrysanthemum flower. It is believed that the cultivation of it began in ancient times when a migratory bird from Siberia dropped its seed in this area, and thus the Tono region is said to be the origin of Yamagobou (kiku gobou).
