"Datsu" refers to the stem of taro, while red datsu is "aka datsu." It is harvested in autumn. When it is pickled, its color changes to a bright red and it has a refreshing sour taste and crispy texture.

Pickled aka datsu to go well with rice
We peel the stem skin of taro (Yatsugashira) harvested in Neo, cut it into 4-cm pieces, roast in a pan once and pickle in sweet vinegar. With a colorful, sweet, sour taste and a crispy texture, it goes very well with meals and sake.
